Pizza! Pizza! Keto Pizza!


Keto for me, started out as another "I'll give it a try diet". I started Keto the end of April 2019, thinking that there was no way possible for me to actually lose weight. I'd given so many other diets a try, so why not this one. I failed diet, after diet, after diet. I didn't really expect Keto to be any different. My thought going into this new "fad" was just this, "I'll try it for a few weeks, maybe a month. I won't lose and then I'll go back to eating the way I usually do. I'll be stuck right back where I started. 

Little did I know, keto was going to change "dieting" forever. I hit it pretty hard, as I usually do when I start any diet. In the beginning weighing in at 172.6 lbs. I started finding replacement food for the food I was eating. Always searching google for keto recipes. If I wanted a brownie, I searched for "keto brownie recipes". If I wanted Lasagna, I searched for "keto lasagna recipes". And so on and so forth. It was amazing that I could find so many recipes! Still I thought to myself, "this is not going to work." 

At the start of my diet, I didn't have a scale to weigh in on. So I would go once a week and weigh. The first week I went I remember I had lost 6 lbs! In the first week! Of course I thought it was probably just water weight. I had lost water weight before, just to stop losing weight. I was happy the 6 lbs were gone but I had been there, done that. So I continued my keto dieting, weighed in the next week and found I'd lost 3 more lbs. What!?! Now I was starting to get a little more excited. I kept on keeping on with keto and every week I would lose 2-3 lbs! I won't bore you with the whole story. Fast forward to today and I have lost a total of 47 lbs! I have more energy. I sleep better. I can play with the kiddos without getting out of breath. This "diet" is now what I call my lifestyle change and I love it. I have cheated a few times, ate some cake, chips, and other things with carbs. BUT I always jump right back on. I love keto and don't ever plan on going back to eating all those carbs!

Anyway, I know that was quite the intro for a low carb/ keto recipe. So lets get into this recipe before I start rambling again. 😂 You won't believe how simple it is! 


Pizza crust:

1 egg
1/4 cup mozzarella
2 Tbsp almond flour
Garlic powder
Salt

Toppings:

1/2 cup mozzarella
Pepperoni (optional)
Olives (optional)
Green peppers (optional)
Any other low carb toppings

Instructions:

Heat pan on stovetop on medium heat. In a small bowl, mix all the pizza crust ingredients. Pour into the heated pan and cook until it's a little crispy. Sprinkle garlic powder and salt on top. Flip. 

While cooking other side put your toppings on starting, of course, with the pizza sauce. Cook in pan until cheese is almost melted through. 

Next, transfer pizza to a pizza pan and put in the oven under broiler for 5 minutes. You may use just the oven if you wish. Just bake until cheese is melted. Cool for a few mins before diving in. Enjoy!

 I hope this helps you as much as much as it has me! I have fixed it a few times in the past couple days. When you have to have a pizza fix, you just have to have your pizza fix!
